Ingredients:
- 1 lb wild-caught shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 4 zucchinis, spiralized into noodles
- 1 bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
In a bowl, toss shrimp with Cajun seasoning and minced garlic until evenly coated
Heat olive oil in a large skillet over medium-high heat
Add seasoned shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through
Remove from skillet and set aside
In the same skillet, add zucchini noodles, bell pepper, onion, and cherry tomatoes
Cook for 4-5 minutes, stirring occasionally, until vegetables are tender but still crisp
Return cooked shrimp to the skillet, toss with the vegetables, and cook for an additional 1-2 minutes to heat through
Season with salt and pepper to taste
Divide the shrimp and vegetable mixture among serving bowls
Garnish with chopped fresh parsley
Serve hot and enjoy
