Ingredients:
- 2 cups soybeans
- Water
- Coagulant such as nigari, gypsum, or lemon juice
Instructions:
Soak beans in water for the entire night
Soak the soybeans, then drain and rinse
Smoothly blend the soybeans with the fresh water
Pour the soy milk into a large pot after straining it through cheesecloth or a nut milk bag
Raise the temperature of the soy milk to about 180F 82C and stir from time to time
Stir the coagulant gently into the hot soy milk after dissolving it in a small amount of water
To allow the curds to form, let the mixture sit undisturbed for approximately 15 to 20 minutes
Ladle the curds into a tofu mold that has been lined with cheesecloth
To press out extra liquid, fold the cheesecloth over the curds and place a weight on top
Let the tofu press for a minimum of half an hour, or until the desired level of firmness is achieved
The tofu can be unmolded, sliced, and served right away, or it can be refrigerated in water for later use
