Smoky Quinoa, Beet Veggie Burgers with Adobo Aioli

These veggie burgers are a delicious and nutritious alternative, featuring the earthy flavors of quinoa and beets, complemented by the smokiness of paprika and cumin. The adobo aioli adds a spicy kick, making this burger a satisfying and flavorful meal.

Ingredients:

  • 1 cup quinoa, rinsed and cooked
  • 1 cup grated beets
  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 4 whole wheat burger buns
  • Lettuce, tomato, and red onion for garnish

Instructions:

In a large bowl, combine cooked quinoa, grated beets, black beans, breadcrumbs, red onion, garlic, smoked paprika, cumin, salt, and pepper

Mix well to form a cohesive mixture

Divide the mixture into 4 equal portions and shape them into burger patties

In a skillet, heat olive oil over medium heat

Cook the patties for 4-5 minutes on each side or until golden brown and cooked through

Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly browned

Prepare the adobo aioli by mixing your favorite aioli with a dash of adobo sauce from canned chipotle peppers

Assemble the burgers by placing a quinoa and beet patty on the bottom half of each bun

Top with lettuce, tomato, and red onion

Spread adobo aioli on the top half of the bun and place it on the burger
