Yemenite Hot Sauce

Yemenite hot sauce, also known as Zhug, is a spicy and flavorful condiment that adds a kick to your dishes. This versatile sauce can be used as a dip, marinade, or drizzled over grilled meats and vegetables.

Ingredients:

  • 2 cups dried red chili peppers
  • 1/2 cup garlic cloves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup ground cumin
  • 1/4 cup ground coriander
  • 1 tablespoon ground cardamom
  • 1 tablespoon salt
  • 1/2 cup olive oil
  • 1/4 cup white vinegar

Instructions:

Soak the dried red chili peppers in hot water for 30 minutes to soften them

Drain the soaked peppers and remove the stems

In a food processor, combine the soaked peppers, garlic cloves, fresh cilantro leaves, ground cumin, ground coriander, ground cardamom, and salt

Pulse the mixture until it forms a coarse paste

With the food processor running, gradually add the olive oil and white vinegar until the sauce reaches your desired consistency

Taste and adjust the seasoning, adding more salt or vinegar if needed

Transfer the Yemenite hot sauce to a sterilized glass jar or bottle, seal tightly, and let it cool to room temperature

Store the sauce in the refrigerator for up to 3 months

Shake well before each use
