Ingredients:
- 1 5-pound bone-in prime rib roast
- 2 tablespoons chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 tablespoon brown sugar
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 cup sour cream
- 2 tablespoons prepared horseradish
- 1 tablespoon chopped fresh chives
- 1 tablespoon lemon juice
Instructions:
Preheat oven to 450F 230C
In a small bowl, mix together chili powder, garlic powder, onion powder, paprika, brown sugar, salt, and black pepper to create the rub
Rub the spice mixture evenly over the prime rib roast
Place the roast on a rack in a roasting pan, fat side up
Roast for 15 minutes, then reduce the oven temperature to 325F 165C
Continue roasting until a meat thermometer inserted into the thickest part of the roast reads 120F 49C for medium-rare, about 2 hours
Remove from oven and let the roast rest for 15-20 minutes before carving
Meanwhile, in a small bowl, mix together sour cream, horseradish, chives, and lemon juice to make the horseradish cream sauce
Slice the prime rib roast and serve with the horseradish cream sauce
