Ingredients:
- 1 lb ground turkey
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup almond flour
- 1/4 cup unsweetened almond milk
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 2 tbsp olive oil, for cooking
- For the sauce:
- 1 tbsp olive oil
- 1 tbsp gluten-free flour
- 1 cup beef or vegetable broth
- 1/2 cup coconut cream
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
In a large bowl, combine ground turkey, gluten-free breadcrumbs, almond flour, almond milk, egg, minced garlic, salt, pepper, nutmeg, and allspice
Mix well until fully combined
Form the mixture into small meatballs, about 1 inch in diameter
Heat 2 tbsp of olive oil in a large skillet over medium heat
Add the meatballs in batches and cook until browned on all sides and cooked through, about 8-10 minutes
Remove from skillet and set aside
In the same skillet, add 1 tbsp of olive oil and gluten-free flour
Cook for 1-2 minutes, stirring constantly, until flour is lightly browned
Gradually whisk in beef or vegetable broth, scraping up any browned bits from the bottom of the skillet
Bring to a simmer and cook until the sauce has thickened, about 5 minutes
Stir in coconut cream and season with salt and pepper to taste
Add the cooked meatballs back to the skillet and simmer for an additional 2-3 minutes, until heated through
Garnish with chopped fresh parsley before serving
