Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, and green onions. Its creamy, flavorful, and perfect for St. Patricks Day or any cozy meal.
Ingredients:
- 4 large russet potatoes, peeled and quartered
- 4 tablespoons unsalted butter
- 1 cup chopped green onions
- 1 cup shredded cabbage
- 1 cup milk
- Salt and pepper to taste
Instructions:
For about 15 minutes, boil potatoes in salted water until they are soft
Set the potatoes on low heat while you melt the butter in a skillet over medium heat
Put the cabbage and green onions in the pan and cook for about 5 minutes, until the cabbage is soft
Put the potatoes back in the pot after draining them
Put cabbage and onions that have been cooked into the pot with the potatoes
Mix the ingredients together and add milk slowly until you get the consistency you want
Add pepper and salt to taste
As a side dish, serve hot
