Sesame Soy Sushi with Wasabi-Horseradish Substitute and a Hint of Lemon

This sushi recipe features a delightful combination of sesame seeds, soy sauce, and a substitute for wasabi using horseradish, enhanced with a refreshing hint of lemon. Its a fusion of flavors that will tantalize your taste buds.

Ingredients:

  • 4 nori seaweed sheets
  • 2 cups sushi rice, cooked
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 avocado, thinly sliced
  • 1 cucumber, julienned
  • 1/2 cup sesame seeds, toasted
  • 4 teaspoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons prepared horseradish
  • 1 lemon, sliced into wedges

Instructions:

In a small bowl, mix rice vinegar, sugar, and salt until dissolved

Pour over cooked sushi rice and gently fold to combine

Let it cool to room temperature

Place a nori sheet on a bamboo sushi mat

Spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top

Arrange avocado slices and cucumber sticks along the center of the rice

Roll the sushi tightly using the bamboo mat, sealing the edge with a little water

Repeat with remaining nori sheets and filling

Slice each roll into 6-8 pieces using a sharp knife

In a small bowl, mix soy sauce, sesame oil, and prepared horseradish

Dip each sushi piece in the sauce mixture and sprinkle with toasted sesame seeds

Serve sushi with lemon wedges on the side for squeezing over the rolls
